Pros/Cons: Nickel vs. Stainless???

I find the Nickel finishes have a slight yellow overtone which I do not care for.
This is evident even in the images posted here.

The minute amount of metal that will be removed is of no consequence...just like rubbing out the paint on a car. Remember, SS is through and through, it does not chip or flake, and is highly rust resistant. It depends on what look you are after. I prefer durabilty over flash, so make mine SS.
