What kind of music would been played at bars and more shady establishments in the 1860 -1900 era ?

The movies often show piano music being played in the saloons, but I really have no idea what other kind of musical entertaintainment was provided.

There's a website that's linked to the Library of Congress with sheet music and audio files. But I haven't figured out how to access it fully. But maybe you can figure it out better than I can.
