what is a . . .

When clearing a jam in a 1911, just what exactly is the method used?

It is called a "rack" something. 3 steps I think.

I have never had a 1911 jam at a time when I could not casually clear it.

It's not specific to 1911s, but are you thinking of "Tap, Rack, Bang"?

Tap the bottom of the magazine to make sure it's seated.
Rack the slide to clear the obstruction and chamber a fresh round.

You might be referring to a "tap, rack, bang." First tap the magazine pretty firmly to be sure it is seated properly, then rack the slide to clear and chamber a new round, after which the trigger should make it go bang.

ETA: Way to go, Scott - beat me to it.

In certain types of jams, the above may be extended by the ever entertaining:

tap/rack/click/strip (mag out of gun)/rack/check jam is resolved/insert mag/rack/bang (hopefull)y. Best done behind cover.

Some include "Roll" between the Tap-Rack steps to insure that the ejection point is aimed downward so that gravity can help clear a jammed empty or cartridge.
Did you know that there is a TEXAS State Rifle Association?
