First off I've never been handgun hunting before so I was wondering if you could usae a .45 ACP 1911 here in Georgia legally? Would the 1911 .45 ACP be a good choice to take smaller game like deer and smaller?

I don't think so. Handguns legal for hunting in Georgia must produce 500 ft-lbs at 100 yds. A .45 ACP maybe produces 400 at the muzzle, if you push it.

Would the 10mm in a similar Colt be acceptable in GA?

Maybe. Hornady's manual shows a 10mm 180gr XTP hollow point producing > 500 ft-lbs at 100 yards if you can push the muzzle velocity above 1400 fps. It shows a 200gr XTP HP exceeding 500 ft-lbs at 100 yds if pushed above 1250 fps. I know that Glock promoted their 10mm as a suitable hunting weapon, although I do not know if they had these requirements in mind. Hope this helps.
