To add to Flyfish's response, the 60-1 designated a 3" heavy barrel. 60-2 was a special run for the NYCPD. They were separate of the standard model 60. The standard 60 became the 60-3 in 1988 with the change to the new yoke retention system.
Other models of S&W also had different dash numbers running concurrently.

If it has an "N" prefix, it was built circa 1970-1972, most likely 1972 because it's near the end of the quoted N1 – N60,000 serial number range. The Model 29 experienced a huge surge in popularity in 1971 due to movie featuring a fictional San Francisco police detective played by Clint Eastwood. ("I know what you're thinking. If there's no "N" prefix, you're probably looking at an assembly number, and the number you want is on the butt. You may have to remove the grips to see it.

I picked up a 649-3 in a trade today.
I have the original box, but there is no date.
The serial number is CEV5215.
Any help will be greatly appreciated.

AFY7XXX = 1984/85
AJP3XXX = 1986/87

I think its 1986/1987. The book isnt very clear to me on the serial# (lots of missing letter data). Interesting though as the detail info for the 686 itself says the -1 (dash one) started in 1986.

Can I ask you for help? Do you know how to reply with a quote? The option doesnt appear on your post for me to hit "quote" like I would expect. Is it because I dont have a long post history?

The N5xxxx is '78-'80, but prob closer to '78.
The N1xxxx is 1973 for sure

Do you have any ideas why the "quote" wont work for me?

No color would be correct. It was common, however for owners to use paint sticks to highlight the rollmarked lettering.

Some current production guns from S&W do come with highlighted lettering where the lettering is laser etched (such as the model 41, 329, etc).

From what I can tell, the only way to quote is by using the "quote" tool button while writing a message. Then paste the quoted text into the post. Not exactly straight forward.
