Just a quick question, if you wanted to own a H&K MP5K which had semi-auto and 3-shot burst modes, where would it fall under US law?

Does the 3-shot burst mode make it full auto?

I'm just curious as I'm not from the US.

Yes, it's full auto. More than one round can be fired with one trigger pull.

3 Shot burst is a more complicated trigger group than the full auto one. Personally, once you've familarized yourself with the full auto HK, it's very easy to get a two or three shot burst when the selector is set to full auto. It's a matter of training.
