Salton Sea scouting trip- SNIPE! (Southern California)

My hunting buddy and I drove out to the Salton Sea/Niland area to check out the dove fields for the second dove season opener, and we had a great time. We saw quail, cottontail, ducks, and what I'm pretty sure was a few snipe. The snipe were almost pure white, little skinny legs, and the telling supper long beak. Am I crazy or is there a species of white colored snipe? The internet has not been very helpful so far identifying these birds.
