I use UnderArmor's "ridge reaper" bow-hunting gloves.
They're a thin neoprene which is surprisingly warm for how much dexterity and feeling it leaves you. They also have a slightly "sticky" material on the fingers and palms which makes it easy to maintain a grip on a cold gun.
I've used several kinds of gloves at one time or another, but for shooting guns I really like gloves made for shooting bows.
