I essentially use the meat just like pork. I also like it on the grill. What's really good is to roast/smoke on the grill for 2-3 hours. Put it in a pan with some beer and cover the whole thing with foil and let it roast on the grill like that for another 2-3 hours. When it get's real tender, shred it and add some barbecue sauce and serve on some buns. Real yummy.
