If it is a choice between taking the gun with me or leaving it at home, I'll take it even if I cannot shoot it one handed.
That said I do practice one handed shooting, weak and strong. I am confident with both hands and all the handguns I have. I carry all my guns in the condition that all I need to do is pull the trigger. Racking a slide one handed is not something I want to expect to do. But I do practice it
