Perhaps a non-polymer .40 like a Sig P229 (can get .357 Sig barrel if you like as well) or Springfield EMP if you like 1911s (concealment is not a consideration, it's just a well made gun that's fun to shoot).
On the flipside, a HK USP .45 is fun.
Otherwise a Colt Delta Elite with a 2nd .40 barrel is nice
