You can rebarrel a 7 Rem Mag to a .264 Mag which uses same case but be warned that .264 barrels have a reputation for being burned out rather quickly. The .257 Wby would most likely have even shorter barrel life as you would be burning the same/larger amount of powder in a smaller diameter bore.
