IMO neither are ideal for your purpose. At what range do you plan to shoot and do you reload? The 7-08 is the obvious choice for the a guy that reloads, much better bullets for other 7mm than the quarter bores. The 7-08 will push the bullets of the same weight nearly as fast as the .25-06, and you will be able to handle bullets above 120 grains.

I personally like the .25-06 better for hunting and I own three .25 calibers and zero 7mm rifles.

Chowder, you can't chamber an AR in .25-06, look at the .25 WSSM for the AR.
