I just Googled "shooting range resort" and turned up a bunch of places that might be close to what you're looking for. Most have trap and/or skeet ranges, but a couple also had rifle ranges, and you might find one with a pistol range if you dug beyond page two... but two out of three isn't too bad. And they seemed to offer fine dining, whatever that means, and lots of other activities: kayaking, horseback riding, the usual outdoorsy stuff.
