"...if I took a baseball bat to their kneecaps?..." You get arrested, charged with assault with a weapon(that's what it's called up here) and likely lose all your firearms. You could try going to a judge and getting a restraining order.
As to cameras, there are security cameras that connect to a computer. No film involved to limit how long they last. Just some cable and software. Not exactly inexpensive, but not horrendously expensive either.
