Posting Links under Signature?

I don't quite understand Why every time I try and post a link under My signature it just reads text and not a link? What am I missing?

Yup, that's it. Links in sigs have to be id'ed as such or they don't get automatically converted by vB like they do when in a post. If you want the link to look like a link make the "Soda Pop's Link" text in yankytrash's example the same as the actual link.
