+1 on Chukars. Little ba***rds run up the mountain and laugh at you. Then when you get up to where they are, they fly down to the bottom and laugh again...

From the standpoint of wariness and smarts, I'd sorta figure on either turkey in areas with a good bit of hunting pressure, or fully-mature trophy whitetail bucks.
Physical challenge? Probably critters like the Dall sheep or mountain goats.

May be I'm just being a homer, but in my experience it has been Rosevelt elk and Black tail deer. I stumbled around the woods with an open black bear tag as well (for the first time) and saw sign all over, but no bears.
