metal finishes

I have two ancient single barrel shotguns that I am restoring. Other than the standard blue what else is out there? I would consider weird finishes, too, though I would like to apply them myself.

Sounds like a job for Duracoat or Gun Kote. Do a search....

slow rust blue

Pilkingtons makes a ready mixed slow rust blue that is easy to apply if you kno how. I would suggest this if you jave truly old guns.
