What's the difference between the Uberti 1861 London Navy and the standard version of the '51 Navy?

Difference between standard 1851 Navy and a London 1851 Navy is the grip frames and barrel address. Standard - Brass; London - Blued steel (Iron).

Difference between standard 1851 Navy and a London 1861 Navy is the same as above, plus the barrel profile. Standard - Octagonal Barrel with hinged loading lever; London 1861 - Round barrel with creeping loading lever.

OK, so my next question... who ended up with these London-made Colts? England? Did they just make them for Colt and ship them back to the USA, or were they purely for the 1850's commercial/private European market?
I've never really thought of middle 19th-century Europeans packing 1851 Colt Navys.

My understanding is that the vast majority of them were sold to the British government. At the time the factory was set up, the British were getting started in the Crimean war. Colt sold something like 25,000 of them to the Brits. Part of the reason that Colt sold so many of them was because the Adams couldn't make enough revolvers to fill wartime orders. But after the Crimean war, either Adams could keep up with peacetime orders or there was something of a wave of British nationalism, because Colt couldn't place nearly enough orders to justify keeping the British factory open. Virtually none were sold into the private market.

I don't think that production lasted all that long - maybe two or three years, if I recall correctly.

The London Models had a round Steel Triggerguard and a blued Steel Backstrap. The squared triggerguards were on the very early 1851's.
The .31 Caliber Colt Pocket Model was also produced in London too.
I don't think the quality or anything else special was done to the London Models.
I really like mine! I especally like the look of the blued gripframe. It's just cool to have a Spanish clonegun that says "London" atop the barrel. Mine is an Uberti and the action is so smooth right out of the box feels like a tuned action.

This is not a grammar forum, you are correct. But you are using the English language to communicate on it and since you are, you should use it correctly. Any time an issue about spelling or grammar is brought up by ANYONE, they are labeled a grammar Nazi or a three year old. You're labeled a "grammer nazi" because you, an adult, are trying to correct the spelling/grammer of other adults, like they are children in school. Just for the record, Uberti is pronounced "00-bear-tee", not "you-bertie."

That being the case, "an Uberti" is closer to the proper usage owing to the soft "u" which begins the name.

An 1873 Winchester, an armorer, a Colt, a Smith, etc.

I do not agree. Uberti is a proper name. The indefinite article 'an' does not apply. A proper name can be pronounced very differently from the way it is spelled and therefore does not follow the rules of 'proper' grammar.
A Uberti is proper. A Ugandan is proper. A Unicorn etc. BTW, Uberti is not your name, so how do you know how it is pronounced? Listen to this video (on youtube) that is from the Uberti Firearms website, and then tell me how YOU think Uberti is pronounced!

Man, this has descended into something strange.

If it makes any difference, I fired an email off to one of my coworkers at our Italian subsidiary and asked how "Uberti" was pronounced. He replied that the "u" vowel sound is almost exclusively sounded out as as soft "u", as in moon.

He said that the video pronounces "Uberti" incorrectly.

Buona giornata!

To steer this every so slightly back to topicality, he also mentioned that he's terribly jealous that Uberti and Pietta make some really great firearms that he's not allowed to own!
