I have an old High Standard shotgun with a 27" ventrib barrel and adjustable choke. I'm considering either hacking it down to 20" (for home defense), or having a smith do it. The clincher would be if he could reattach the adjustable choke on the shortened barrel. Generally speaking, is this possible ?

Yes. The barrel has to be turned down to the right diameter to install the choke anyhow, so it should be no problem to sweat off the old choke (they are soft soldered on) and reinstall it on the new muzzle.
