m1903 sporter

I have a m1903 Remington that has already been drilled and tapped sometime ago. I would like to fix it up a bit, I have seen on some forums that a lot of people polish the bolt. What are the advantages of this. To me this is a problem because then the bolt is exposed to water and at risk to rust. Bottom line I am looking to Parkerize the rifle and want to know what my options are for the bolt and inside the receiver.
