Springfield 1911

Who do you recommend to install front and rear iron sights on a basic Springfield 1911?

Any decent smith with some machine skills should be able to do the sight installation for you.
Check and see if there's a smith with these skills in your area, if so ask for references so you can see his work.

"...a basic Springfield 1911..." Which one? Their GI .45 is about as basic as they get, but putting better sights on one isn't a big deal. More about the front sight. Their alleged 'Milspec' comes with fixed high visibility sights. It's not a big deal to put an adjustable rear sight on either. As long as the heights match.
"...Any decent smith with some machine skills..." Any decent smithy. Machining skills aren't required. Knowing how to install a front sight is though. No machining involved.
Doing a trigger job on a 1911 isn't rocket science either. Installing a new trigger is more involved. Requires fitting.
