Sandhill Crane Hunting

A buddy of mine and I were drawn for sandhill crane out here in AZ. Neither of us have ever taken a crane before and I was wondering if anyone knows what to do with one. Is the meat any good or should I just have it stuffed?

Your state game department oughta have both helpful hints about the hunting, and probably recipes.

I've never hunted them, but hearsay has it that they're good eating. Dunno if they're oily, like ducks. Anyhow, they'd be prepared either like non-oily birds like chickens/quail, or oily birds like ducks or to a less extent, doves.

Taste like chicken

I would like a stuffed one. They are nice looking birds. What would be even nicer is to have two cranes mounted together
