I can't find Dacron

I have been to several fabric stores and can't find any filler marked Dacron. All are polyesters. Will they work as well?

Dacron is trademarked, Its all Polyester. Someone adds a wiz-bang
additive like nylon fiber and it becomes Dacron.
So, Yes you're good. I think the stuff I have is called Poly-Fill.

Walmart's that still have a fabric/sewing section will have it as will any craft/hobby place like Michael's or Hobby Lobby

Don't use it then. There's nothing special about Dacron.
