We went and got the meat this afternoon (ahead of the winter weather!) Our scales measure about 37 pounds of meat (including some jerky) from a 73 pound carcasse. Sounds kind of light to me, but what do I know?
But with the cost of the processing, next time I'm going to skin and bone out the thing myself. Buy a good kitchen meat grinder and just bring it home in the cooler and go to town. The dogs will certainly love me....! Probably good advice, Fremmer. If it ain't broke, don't fix it. Springmom

Springmom you just made a FANTASTIC shot and dropped a nice young buck right in his tracks. Sounds to me like everything is working PERFECTLY.
IMO don't mess with perfection. I don't think you should change, scope, round or anything. . .

SM, my friend took 2 deer to this one processor this year (out of the 6 he got), and both times he got back a ridiculously low amout of steaks - like 4 small packages of steaks each time, and that was with instructions to steak everything possible to steak. First time he complained, and they gave him a discount.. second time he didn't compliain - just told me that he won't go back. But these were from 90 and 95 lb-ish deer, so he definitely got shortchanged. You may have too -sounds like you did a little from standard ratios, IINM. So yeah the only way to be absolutely sure is to butcher it yourself - I don't know how common skimming, or just carelessness (failure to keep separated from other meat) is with processors, but apparently it's not UNcommon.
Oh yeah, and don't mess with perfection, +1. |
