I originally looked at a .270 because it was a flat shooter (as I dont trust my ability to judge distance very well), but you're right on that, there is endless information on the .308 cartridge that more than covers any concerns of its 'rainbow arc'.

Shooting inside 200 there isn't a need for "flat shooting". Even a 30-30 can be zeroed at 150 meters and it will be "point and shoot" out past 200. If you set up a "pipe zero" for your rifle even a 30-30 can be point and shoot out past 250.
