Yes, and when I serve spotted owl to my dinner guests, I always precede with an hor d'ourve plate of deep-fried snail darters.
[In case you didn't know, snail darters are tiny little minnow-like fishies that are protected by the federal endangered species law as well. It was on the Little Tennessee river in the late 70's. As a native, wish the darter had won that one. Lots of folks thrown off their ancestral land and a perfectly good river was turned into a worthless dam. TVA is a prime example of how a Federal bureaucracy acheives a state of being beyond it's design. You had to be there to understand. Knoxville had eight or nine wonderful lakes within 30 minutes drive and two in the city limits. I'm late in replying to this, but I've been at the farm being sure my deer are fat for this upcoming rifle opener.
Cubed deer meat (southerners don't say, "venison" ) marinated in Italian dressing, lightly dusted with flour, salt and peppered to taste, fried in butter, until the juices turn a light pink--then pull it. Serve it up with some mashed taters, gravy, cathead biscuits, and sweet tea. That's my favorite meal... Other meats Squirrel Rabbit Turtle Froglegs Gator Tail I didn't see anyone add fish meat to their list so here's mine, in order from favorite to least favorite. Freshwater... Trout Catfish (frying size - about a pound a piece) Crappie NOT "crop"pie ;o) Bass Bream Saltwater... I've tried shark, snapper, grouper, sea bass, sea trout, flounder, cod, and a variety of others, but not enough to reach a conclusion on... Feathers... Chicken..... my favorite so far. Quail Turkey Emu I need to broaden my horizons on our feathered friends. By the way, y'all can have my share of the "Menudo" of both varieties! 1. Elk tenderloin 2. Pronghorn chops 3. Muledeer Sirloin 4. Antelope Liver ( a guilty pleasure) 5. Fried Squirrel 6. Turtle soup 7. Quail BTW "winged rats" are called "squab" in europe and I've never tried possum but i hear its edible, and the Olny fish i can think of thats necessary to SHOOT to getin the boat is a shark... Fish: unagi (smoked freshawater eel) Taro (fatty tuna) Mako Shark (like white steak) Barracuda (a sweet flaky fish Have a pic of the one I caught, barely legal at 3 feet long) Fried Channel Cat Rainbow Trout Giant Clam Mackeral Orange Roughy beluga caviar with water table crackers and a chilled champagne PS you can eat any kind of fish if you have enuff wasabe and soy sauce. Venison backstrap filets cooked rare on a charcoal grill, sprinkled with some kosher salt.
Venison here in the midwest is basically "farm raised", since their diets consist of high protein soybeans, alfalfa, and yellow field corn. Supplemented with apples, acorns, and browse, and you have a high protein very lean piece of red meat. Cannot be beat. |
