The Glock 19 and a 1911 are two I think everyone should at least try out.

I would just buy one of the Beretta's and keep the Mak.

Very good point!!!

But if you must trade, after that deal keep one Beretta, and trade the other one for a basic, bare bones 1911. Unless you want to become a dedicated "collector", it doesn't have to be a genuine milsurp 1911 which will save you mucho bucks. You will however have examples of US military sidearms from 1911 to the current date.
Besides, when it comes down to your original queation, a 1911 is a handgun that every shooter should have,

Are Glocks not just mechanical devices like all firearms no better or worse than a lot of others. I have seen plenty stoppages with Glocks at the range.

Pistols "everyone should own"

For a literal answer, and not one brought about by the OP's personal example.

#1. 1911
#2. Browning High Power
#3. Beretta 92
#4. CZ75
#5. Glock (Full size, preferably a 17 because it started it all)
#6. Ruger MK series 22 rimfire (Every shooter has to have a good 22)

Lemme get this straight.....

1 (one) $600 AK clone in trade for 2 (two!) Name Brand semi auto pistols worth around $600 each ......

Ummmmm ..... one of them is stolen, right? Or both rusted/altered in some way? Why would someone do that deal if everything is on the level?!?!?

Smell test: FAIL.

Run.

Well, unless it's a 3rd gen G22 with a light... or a 4th gen 9mm... or pretty much any G36... or if you're shooting lead bullets... etc.

.22 LR S&W Revolver and/or Colt Diamondback .22LR
.22 LR Ruger auto
.38spl S&W Mdl 10 (I prefer a heavy barrel), MODEL 15 .38spl or Model 19 .357
.45acp cOLT 1911
.22LR S&W Model 41, or High Standard, Ruger, Colt Woodsman or Browning Medalist target pistol
S&W or Colt snubnose .38

Finally, (if you really must) a Glock or SA XD or S&W M&P high capacity or a Beretta 92

And, on and on... I could dump a pretty hefty part of a lottery win into handguns that I "JUST HAVE TO HAVE"....

Over the years I've acquired the handguns I "should" own:

Colt Series '70 Government Model, 45ACP
P08 Luger, 9mm
S&W Model 19, 357 Mag
Ruger Mark II, .22LR
Browning Hi-Power, 9mm
S&W 5903, 9mm
Glock 22, 23 and 27, all 40S&W

In terms of "iconic" handguns, to Quentin2's fine "starting" list, I would add:

Mauser C-96, 7.63x25mm Mauser/9mm Luger
Walther P-38, 9mm Luger
Colt 1873 "Peacemaker", .45 Colt/.44-40 Winchester
Colt Detective Special, .38 Special
Smith&Wesson Chiefs Special, .38 Special
Smith&Wesson Model 29, .44 Magnum
Ruger BlackHawk, .44 Magnum
Colt Woodsman, .22rf
SIG Model 226, 9mm
Colt Pocket Model, 32 ACP/.380
Thompson Center Contender-name your caliber
Beretta Model 92, 9mm Luger
