Try placing the bullet a bit lower and further back, destroying the lungs instead of the meat on the shoulder.
I don't know anybody that eats the lungs, do you?
Lung shots do not always give the "Jovian Thunderbolt" kills that shoulder shots often do.... the deer may run 50-100 yards, but he won't go far, and won't get up after he goes down, which I have seen shoulder shot deer do.
