You CAN control ejected brass with springs...
Sounds like you need to visit Wolff Springs (
www.gunsprings.com ) and 1) get a heavier spring for your SIGMA, 2) a lighter spring for your 1911, and you 3) should probably leave the Beretta alone.
The website will tell you the factory recommended weight for each gun/caliber, and then you go from there.
