There's different manufacturers and each has their own method.
The nickel may not hold up very well on some of the Italian revolvers while it is very durable on the Traditions rifles.
There's also quality after market outfits that can offer much higher quality finishes than some of the factory applied nickel.
Above all nickel is rust resistant, even more so than some stainless steels.
