This is true to an extent in my experience. Been wearing a 5" 1911 with a good holster and belt since 1984 and got a good holster for the G21 and gave it a try for awhile. The 1911 is a huge difference from the G21, very thin and compact. The weight isn't the problem with a good belt and holster like you say, but that thick brick G21 doesn't get carried anymore. YMMV.
