BingoFuel, NOSLER makes excellent bullets and your 124's are as good as any conventional JHP. Myself, I've been loading the standard old-style Remington 124 gr. JHP "Bulk-Bullet" for many years.
I don't bother with FMJ because there is no price advantage in most cases and in 28 years of handloading, I've yet to use a plated bullet. A good hard cast lead bullet will do anything a plated will and I would use neither for defense. For hunting loads using a properly sized hard-cast, you're not limited to the 1200 FPS that's usually recommended for plated, or thereabouts. In .357 & .41 Magnum I've never had any problems using hard-cast loaded to JHP velocity, but I always use a bullet that is at least .001" above groove diameter and just haven't had the throat issues that some experience.
