I use my old 2001 Ford Expedition and kept everything simple.
I took out the third row seat and folded the second row. I put in a cot on left side for sleeping and a 48qt cooler holds all my kitchen stuff. A 120qt cooler is used to take home games. Another 48 qt cooler is used as dry storage. I put a cargo platform that goes on to my 2" hitch to carry extra coolers. I keep a pair of folding seats in the back. I have a 3'x5' plywood platform that I put on top of my cargo platform to use as table when eating and stuff. It takes me less than 3 minutes to set up anywhere and less than 5 mintes to break camp and move.
