I guess Glock shave very small area of grip (right underneath of the butt) so that short finger people can reach the trigger easier. For the people who have big enough hand for G21 but feels stretching to the trigger, SF should helps.
But people like me with not big enough hand to start with, there is not much difference between G21 and G21SF.

It is kind of like Sig has a short trigger, Glock shave the frame.
