1) use a center punch to put a divet in the center of the bolt.
2) drill a hole in the center of the bolt using a left handed drill bit.
That is often enough to unthread and remove the screw. If not,
3) insert a screw extracter (easy out) into the hole and remove the screw.

Probably about $20 in tools that you can reuse over and over if/when it happens again.
