Another 'gator hide question.

I watched a Croc' farming documentary from Australia awhile back. They were harvesting the hides (and meat), for the leather market. They did not harvest large Crocs, just those of certain size. I drew the inference that it was because of the size of "plates", those rounded rectangular patterns that make up croc hides, which get bigger and bigger as the Crocs age. My question is, to what purpose do they put the hide to (with very large plates), when they would seem to be too big for shoes, luggage, handbags, etc.? Is there still a market for such huge skins in the leather business, or is the hide destined for a full-size gator mount someplace...Like I said, being from Michigan, I do not know much about 'gator hunting and related.
