I was thinking along the same lines. Pick whatever kit you feel is best then just buy an extra trunnion and stock to suit your tastes. For me it's be a fixed stock trunnion and an ACE sidefolder.
Though I could have swore I saw some polish fixed stock AKM kits somewhere. Can't seem to find them now. Though maybe those were milled receiver kits.
