It can be done, but I don't know exactly how easy it is to make this happen. This is what I did to an old Army parts gun.
1. Buy a copy of Jerry Kuhnhassen's book on the 1911.
2. Lower the ejection port and bevel the inside edge.
3. Install a longer ejector.
4. Tune the extractor for proper tension and hook angles.
5. Tune the ejector angles.
Before doing these things my military 1911 would fling brass to the front right, to the right, to the rear right, straight up or straight back with no rhyme or reason.
