I sew by hand, either double-needle saddle stitch or safety awl. For the liner leather, I use 1.5-2 oz sheepskin skivers, although the ones I have lined in calfskin look quite a bit better and seem very durable. You can also try pigskin for lining, but it is not as smooth and there is not a lot of vegetable-tanned pigskin around.
