Don't know specifics on the convention center, but from what I understand of Florida law, a sign or notice of no weapons does not carry the force of law. If you do carry and are asked to leave, you have to leave or you could be charged with trespassing.

I am not a lawyer, nor do I play one on the Internet, but that's my understanding.

For Florida laws on CCW, you can't do better than Gutmacher's book on Florida Gun Laws and Regulations.
