Most wild birds are edible, however in order to make the meal worth the effort, you'll need to stick to the plump variety of wild game birds...woodcock, grouse, pheasant, quail, wild turkey, chukkar, dove, and any waterfowl will keep you interested. Stay away from predatory birds like owls, hawks, falcons, eagles, etc and any song birds since their meat will have a gamier taste to it.
Breast meat on any wild game bird is delicious. The closer the meat is to bone and tendons, the gamier/tougher it will be. Use an egg batter with flour or bread crumbs and sautee or fry it in oil or butter. Can't do better than that.
