I recall something about the rear sight needing to be driven in a particular direction and the new sight replaced the same way. Any help would be appreciated

From behind the gun, drive the sight out from left to right. Replacement goes in from right to left, of course.

AFAIK, the rear sight dovetail is not tapered on a 1911 slide. There might be a slight lead on the right side but the cut is not tapered so you could drift it out either way. If the cut was tapered, how could the rear sight be adjusted for windage?

The taper is in the sight -- not the dovetail. Mr. Browning apparently did not envision the troops ever needing to drift the sight for windage control. Not all sights have tapered bases, but some do.;)
